Smoked Mackerel on the BonFeu Broiling Board

Ingredients:

  • 2 whole mackerel, gutted and cleaned
  • 1/4 cup sea salt
  • 1/4 cup brown sugar
  • 1 tablespoon black peppercorns
  • 1 tablespoon coriander seeds
  • 1 lemon, thinly sliced
  • Fresh dill sprigs
  • Olive oil, for brushing

Instructions:

Prepare the Bonfeu Broiling Board:

Place the Bonfeu Broiling Board over the BonBiza Firebowl and ensure the fire is burning steadily, creating a bed of hot coals. Aim for a consistent medium-low heat.

Prep the Mackerel:

Score the skin of the mackerel on both sides with a sharp knife to help the smoke penetrate the flesh. In a small bowl, mix together sea salt, brown sugar, black peppercorns, and coriander seeds to create the dry brine. Rub the dry brine mixture generously over the mackerel, ensuring it coats the fish evenly. Allow the mackerel to rest for 30 minutes to allow the flavors to penetrate.

Smoke the Mackerel:

Brush the Bonfeu Broiling Board with olive oil to prevent sticking.
Place lemon slices and fresh dill sprigs on the broiling board to create a bed for the mackerel.
Carefully place the mackerel on top of the lemon slices and dill sprigs.

Cover the Bonfeu Broiling Board with the lid to trap the smoke and allow the mackerel to smoke evenly.

Smoke the mackerel for about 20-25 minutes, or until the flesh is cooked through and flakes easily with a fork.

Serve and Enjoy:

Carefully remove the smoked mackerel from the broiling board using a spatula.
Transfer the smoked mackerel to a serving platter and garnish with fresh dill sprigs and lemon wedges.
